在所有的菌子中,松茸是个很不一样的存在。松树下冒出来的松茸,有着独特且强烈浓郁的松脂香味。

Among all mushrooms, matsutake stands out as a very special existence. Sprouting under pine trees, matsutake has a unique and strong pine resin aroma.

它的生长环境与名字一样“仙里仙气”,它只能在没有破坏的原始稀疏森林中,与树龄50年以上,70年以下的松树、栎树共生,靠吸取树根系中的某种糖类存活。

Its growth environment is as ethereal as its name suggests; it can only thrive in untouched, sparse primitive forests, coexisting with pine and oak trees aged between 50 and 70 years. It survives by absorbing certain sugars from the tree roots.

“高端的食材,往往只需要最朴素的烹饪方式。”当年纪录片《舌尖上的中国》里这句精辟的介绍让松茸成功“出圈”,为国人熟知。

每年山间松茸破土而出时,浓郁的松枝味道混合淡淡泥土清香,简单清洗后切片食用,带来鲍鱼般温润滑爽的口感,不仅如此,芯子里的部分,随着咀嚼还会有甘甜的汁水,就像吃细腻无渣的笋尖一般。

Every year, when matsutake mushrooms break through the soil in the mountains, their rich pine fragrance mixed with a faint earthy aroma can be enjoyed. After simple cleaning and slicing, they provide a smooth and tender texture similar to abalone. Moreover, the core part of the matsutake releases a sweet juice upon chewing, much like eating tender bamboo shoots without any fibrous residue.

松茸仅仅在七八月份云南雨季的时候“昙花一现”,过了这两个月,想吃到新鲜的松茸,几乎就是在梦中了。

Matsutake mushrooms appear briefly during the rainy season in Yunnan, only in July and August. After these two months, finding fresh matsutake becomes almost a dream.
